A food service Life of sorts to date

How times have changed...

The pictures on this page are pretty dated except the bottom one,, the guy on my left works a great deal with me on all food related events in my life.

My Work resume starts very loosely at an italian pizzeria/restaurant, now defunct due to tax evasion.  Yes corrupt food service owners. What a shock. Here is where the career so roughly begins.

To date, I have worked actively in the culinary field since 1981. From Family style Pizzerias, Upscale, Family dining restaurants, Fine dining, Hotel Restaurants, Hotel Large catering on and off premise, Kosher and the like, to the simple back yard BBQ’s.

Recently, or in the past 8 years I have moved completely out of the kitchen to a more domesticated or suit and tie prick role of a District manager.

While I do the DM job,, I still have a passion for the food. But much of the issues I face anymore have little to do with food and more to do with “People “ issues.  This I can do without.  I find that now more than 17 years later,  that I really had a love for and with the guys and girls I worked with at the Treaty of Paris. Again, yet another place where times have changed.

I find myself coming back to a friend and mentor who helped me begin changing my life some 17 or so years ago. His name is Gerard. Gerard recently owned and ran a very successful Gourmet food store and fuel station on the Eastern Shore for the past 10 years.  I have had opportunities to work with him as both a partner and to simply help out in a pinch, and I was terribly conflicted due much to  my current successes or otherwise, in my  career as to making such a huge financial change to my life and family when I was not forced to do so.  I  simply do not know what I want to do at this stage of my life “past 12 years”.  I really enjoy working with Gerard.

I hope that we could do something together some day soon.  I really enjoy his company and know we could make something successful together.  Gerard was my Chef and played a key role in my personal development at The Treaty of Paris in Annapolis back in 1987-93. That is still the case today.

While all of the above folks helped shape my career and I know I’m leaving some out here, I owe them all a debt of gratitude.

The folks with a star next to their name, are ones whom I stay in close contact with, and respect tremendously.

People that have helped shaped my culinary career  from past to present;
